They were made by a beauty called Aija (on the right:)She also made these crisps from carrot & parsnip

Brian Clement Lecture

This months meeting for the Raw Food Course was in the Maynooth college. We went to a lecture there by Brian Clement, a doctor who is the director of Hippocrates Health Institue in Florida where people go to cleanse & heal from diseases, mainly cancer. He spoke for 4 hours, I like how he sipped on a green juice- I so wanted it! Also at the event were The Servents of Love serving great food, books, equipment, superfoods and supplements
He rated the best foods to consume with 5 * 's, then 4 * 's & so on.

On his 5* list are wild edible weeds, wheatgrass, sprouts, algae, seaweed & ripe tropical fruit.
The 4* list, edible flowers, garden veg, green sprouts, ripe olives, succulent fruits & young coconut.
3* has saurkruat, nuts, farm veg, sprouted grains & seeds, vine grown fruit & dehydrated veg on it.
2* root veg, mushrooms, sprouted beans (mung, audiki), dehydrated grains (bread, cookies)
1* salad dressing, raw chestnuts and dehydrated nuts, seeds, legumes, root veg.

As I see it everything on the is vegan & a wholefood which is better then a lot of stuff being called food these days. Depending where somone is on their health journey will determine what food list they start to eat from.
He spoke of~

Optimum brain functioning requirements

1. Essential fats
2. Phospholipids
3. Amino acids
4. Glucose balance
5. Intelligence inducing nutrients

Home remedies
Aromatheraphy baths
Essential oils
Accupressure
Zone theraphy
Vision exercises

He also answered tonnes of questions about health & disease.
It was enjoyable evening & a good social & educational experience.

Happy Spring

...yesterday was the spring-equinox, when the amount of day-light & darkness were equal. So from now on there'll be longer day-light hours. The equinox is an auspiciously ideal time to make goals & set intentions as the fertile energy of spring will support them. So I was chuffed when an open-day for a Raw Food Instructor Course I want to do was on yestersay, I signed up for the course with the force of the equinox behind me:)

It was in the Hayden Hotel in Portlaois about 2.5hr drive, a fab day, Sabrina came with, I kinda dragged her but I went to a Chipmunk concert with her on friday night so I didn't feel bad . The event was mostly raw recipe demo's & some info about the course. It was nice to meet other like minds. The recipes included coconut-milk, coconut-cream, pickled onion, pickled cucumber, cashew mayo, pumpkin seed mayo, waldorf salad, nut burgers, lentil soup & choc-peppermint surprise for dessert, that was my favorite. Sabz loved the choc-mint cake too. I'm still juicing but I couldn't let that sweet yumminess pass me by.. I got some maca & pau d' arco bark there that I'll use for elixiers.

The cherry on top was a visit to the local play-ground for some fun, sun, fresh-air, stretching & play :) & to the health shop of course.. which didn't have a huge selection but it had a funny name at least 'the fruit & nut place':)

Health Day


There was a 'health day'on yesterday at UCC in Cork so I went to sell & promote my raw food treats that I make. I made some of the cheeze-cakes I made the last day for 'health week' except these ones were a bit different, they had the same filling but for the crust I used raisins instead of dates & flaxseeds instead of nuts so it was a bit chewier, and they looked more like pies so I called them 'lemon & goji pies'. I told people they were like cheezecakes with no cheese. I sold them all so I was delighted. I also made flax-crackers & energy balls, yummers.

It was a good day the sun-shone all day. There were lots of people, and some were actually curious about health food & nutrition. But I was surprised to learn that many of the students there hadn't heard of the raw vegan diet at all, which makes me feel fortunate and grateful to be on to a good thing and to be able to guide and advise people with their diet.

Goji-lisous


I did some raw-food catering for my local health food store last week as it was 'health week'. The store owner aranged for speakers to come to share their knowledge on their various fields of expertise. They included a Nutritionist, EFT Practicioner, Marathon Runner and author Karen Ward who wrote 'Change a Little, Change a Lot'. It was fun, there was raffles, good info & great food :)
I made the old reliable flax-crackers. 2 types, the sundried tomatoe & garlic ones for delishous they had a hint of red which nicely complemented the slight green of the spinach-pesto crackers. For them, I made dips from sunflower seeds, olive oil, garlic & lemon juice. 3 types- spinach & onion, sd-tomato and beetroot flavours, altho the beetroot was more for the color rather than flavour.
For sweet I did truffles made with Goji-berries, cacao-nibs, raisins, flax-seeds & coconut-oil, oh so nice they were but the raw-Goji-cheeze-cake stole the show. It awakened tastebuds I didn't even know I had. Everyone loved it, especailly when I explained that its sugar-free, dairy-free, and gluten free and that its so good that you could even eat it for a healthy breakfast.

Wish I got more pics but I was kinda consumed with the whole event.

Raw Banquet


I'm oh so new to this.. to both raw foods and blogging, well I've been experimenting with eating and preparing raw foods on & off all year but this is mi first ever blog!!!
I am really exited and ready to go deeper into the whole raw food movement. I am encouraged by a 'raw christmas banquet' I attended over the weekend in Dublin, hosted by Natash Czopor
It was sensational in every sense of the senses! It was held in an empty shop furnished only with 3 long tables and several bails of hay (our seats) & hay on the floors. The food was served on large leafs, there was a platter of starters with things like herbed creamy cheese inside mandolin sliced beetroot and spicy flax bread squares with sprouted seed dip & a cherry tomatoe on top.
The main course was a spouted brazil nut, parsnip and spinach roularde with fresh rosemary marinated colorful root vegetables, cauliflour and nut mash, marinated portobello mushrooms, and chestnut mushroom polenta ragout gravy. Desert was another platter of delectable delights, like raw chocolates and banana & nut biscuits, mi favorite was made from processed walnut and dried apricot for the base with something creamy & sweet on it not sure what & topped with slices of plum and passionfruit seeds (caviar!).
A group of poets shared their talent between courses and the 'jazz type' band entertained some more, and guests voulenteered with more songs, stories and poetry, it was a wonderful and savourable night.

I am oh so new to this, to both blogging and raw food, well I've been experimenting with eating raw food on & off since early this year '08 & it's mi first blog ever!!!

I live in Ireland where the climate is a bit cooler so eating raw food is definitly not common practice, not by a long shot. Although I was in Dublin (the capital city) over the weekend and attended a lovely 'raw christmas dinner banquet type thing' hosted by Natasha Czopor whom also has her own range of raw goodies in various health shops & deli's in Dublin. It was great, if not very different, it was held in an empty shop furnished with only 3 long tables, several large bails of hay (our seats), & hay all over the floors. We had fizzy water with lime pieces & mint leafs in-it was delish ans really thirst quenching! we were served the food on these huge leafs that were cut into big squares, most ate with their fingers but there was the option of a tiny wooden fork too! we ate beautiful tasty sprouted brazil nut, parsnip and spinach roularde, marinated mushrooms, cauliflour & nut mash, colorful dehydrated root veg, onion & mushroom gravy and much more. desert was some of her own tasty creations of raw chocolates, banana & nut biscuits and various other types of sweet tasters, mi favorite had a base made from dry then soaked apricots & walnuts processed together, with sweet creamy stuff on top ~ not exactly sure what, and topped of with sliced plums & passion fruit seeds (caviar!). There were good poets sharing their talents between courses and a jazz type band and a few voulentered with songs and poetry. It was unforgettable, enjoyable and savourable.
