Raw Bread


This is a wonderful raw living onion bread made by lovely friend Ayia
Davis who lives in London.

I will be supplying the health food shops around Ireland with it. At the moment it is available in all of the health food shops in Cork and will be available in more shops around Ireland in the next few weeks.

It is made using raw organic sprouted bio-dynamic buckwheat.

I make this salad a lot, with different variations.. The main ingredients are ones that shread easily such as carrots, beets, cucumber, black radish, corgette etc..

Push them through the food processor with the shredding blade on. Then stop with the shredding and add an avocado, chives, minced garlic and some dressing or what ever you would like.

Also, to soften and flavor it, let it sit for a while with lemon juice and a sprinkle of salt.
Another lovely addition is sprouts.. tossed in and mixed around, any type will be great.. mung bean, alfa-alfa, radish sprouts.. and the more the better.

Sprouts grow easily in a jar, you need to water them everyday and soak them initally overnight and strain and rinse in the morning..

Raw Food Transformation


I am delighted to be working with and documenting the progress and transformation of my friend Martin O Regan. We began this new chapter on monday 26th sept 2011 and we're going to post weekly weights and measurements until Martin is where he wants to be. At the moment he is about 22 stone and his measurements are:



52'' waist
47'' hips
48'' chest
26'' upper leg
16'' upper arm

I am diet-coaching & personal-training Martin. His diet will consist of raw, organic, vegan nutrient dense foods, with an emphasis on juices and superfoods. Martin has also taken up exercise, which will be helped by the energy he'll have from his new diet.

On the first week of Martin's new healthy lifestyle his measurements are as follows:

A Taste of Dublin


I went to Dublin on saturday for the day and visited a few markets, I searched for an aloe-vera plant and some durian but didn't get either :(Oh well there's always raw chocolates and cake to make a girl feel better..


I had some juice at the farmers market in Temple Bar to keep me juicy on a warm summers day..
Orange, celery, apple, cucumber and ginger.. delisi..





I also took a trip to the organic food co-op, which is on every saturday from 10 to 4pm in Newmarket Sq.. I got some fruit & veg, and some superfoods there aswell.

Roll Them Balls


I created these tasty chewy balls sometime last year. They're a real treat, raw, organic and healthy. The original recipe called 'cacao-coconut balls' has both them ingredients mixed into a base of ground flaxseed & raisins, then roll them in coconut flakes. I've since varied the recipe to make 'lemon-coconut balls', by adding lemon zest & lemon powder to the base & also rolling the balls in the lemon powder. These are the bomb, they actually look & taste like lemon bon-bons.

Another variation are 'goji berry balls', with goji's mixed into the base & then roll the balls around in goji powder, which is made from ground up goji-berries. Go on roll your balls, you know you want to, its quick and easy and fun, enjoy.

When Life Gives You Lemons...



Make sure to zest them and make some nice recipes too ;) And they also have many other uses. Adding the zest to desserts gives a subtle yet distinct flavour, another taste dimension.

I love lemon, its a refreshingly feel good fruit.
It's so adaptable, it is used in recipes and remedies like -

~ Salad dressings
~ Desserts
~ Fruit juices
~ Herbal tea's
~ Lemonade
~ Spritzer & toners
~ Flavoured water
~ Flu tonics
~ Beauty aids


Its the ultimate beauty aid~

Add a few drops to face-masks, it lightens freckles
It useful for oily skin & lessens acne
It helps to diminish wrinkles
Dab it neat on the face to tone & tighten the skin
Use it as a hair rinse for dandruff
It whitens teeth when used with baking soda & it freshens breath
Use it topically on toe nail fungus
It alkalises the blood which can with weight loss
Reduces water retention
And its used in many cleanses & flushes for health & beauty


Lemon Powder

I keep the organic lemon peels and dehydrate them until they are hard and crisp then I grind them up into a powder which I use in recipes and also as a natural shake-n-vac carpet freshener before hoovering.

And I make my lemon cheezecakes with lemon powder which gives them their lovely color and taste, yummers.

Yummy Life

I haven't blogged in ages but here's an update on my raw and healthy life. In early July I started collecting my drinking water from a natural spring, well its called a well, St Johns Well. It's shaped like a bee-hive with a tiny opening, there's a pool of water inside but I get my water as it curiously trickles down from the walls inside or pours down from them depending on the recent rainfall. It tastes crisp and is refreshing and is quite cold, which is something one should look for when collecting spring water, the colder it is the less chance of harmful bacteria being present in it. Good drinking water is essential for great health and our bodies are mostly made from water so it makes sense to hydrate your blood and organs with natural water.

I first tried a Durian fruit during the summer too, I loved it despite its shape and funky smell. Tho I didn't enjoy them as much when I ate them again in the autumn.
I blended up a segment of durian with blueberries and almond milk, it was so nice...

I find that eating out is becoming easier for my healthy appitite, maybe its my increased intuition since going raw that is leading me to the best restaurants around or else the world is becoming more open to healthy eating, I think its a mixture :)

Kissmas Day


Kissmas day was lovely, filled with love & laughter. I spent the day with family and friends, exchanging gifts, entertaining guests, tasting great food, watching movies, dancing, taking pictures, having fun, relaxing and really and enjoying the company.
Now in the house where I spent Christmas Day there aren't any vegetarians never mind vegans or raw food people. So before I left my house I had a huge breakfast of guacamole filled peppers. I took with me a lovely pie that I created the night before, I made the crust with almonds, dessicated coconut and dates, the filling (was so filling!) was walnuts, cranberries and agave blended until creamy and topped then with berries. I also made some little treats called 'snowballs' from cashews, dates, coconut oil and rolled in dessicated coconut. My intention was to fill up on all of this and eat as little cooked food as possible, and it worked a treat! and everybody loved them. I had some, homemade veg soup, roasted vegetables, ratatouille, brussels sprouts and my own stuff and I felt great about it, I didn't miss eating dairy products never mind meat. I have recently had some huge shifts around my eating habits, I already knew I wouldn't eat meat again, now I am at the stage where I don't want or miss dairy.
As my diet evolves through eating raw food I am finding myself in a more peaceful space where I enjoy being present and also look forward to tomorrow. My energy is high and my skin is silky. Am also loving the feeling of hemp clothing against my skin.
